How to Make Poppy Larry’s Tasty Latke Recipe for Hanukkah
Latkes are my father-in-laws favorite thing to make and he so graciously shared it with me and I’m sharing it with you because it’s so tasty! This is the recipe we use to make latkes (potato pancakes) in our house and if I’m being honest we don’t just make them during Hanukkah because we love them that much! But, Hanukkah is the time to definitely eat as many latkes as you can.

You’ll need:
- Grater
- Frying pan or electric fryer
- Bowl
- Baking sheet
- Lots of paper towels
- Spatula
Ingredients:
- 1.5 lb Potatoes (Russet or Yukon Gold or a mix)
- 1 Small Onion
- 2 Eggs, Beaten
- 3 TBSP of flour (can use all purpose or gluten free)
- Salt, pepper, garlic powder (sprinkle of each)
- Vegetable oil for frying
Directions:
1. Peel and grate the potatoes. Use the large holes on the grater or use a food processor. (I prefer a grater!)
2.Soak the potatoes in a large bowl or cold, salted water for at least 15 minutes to draw out the potato starch and the pinkish color.
3. Drain the potatoes well (I like to line a baking sheet with paper towels, pour the potatoes on the paper towels, top with more paper towels, and then dry the potato shreds that way). You can do this with a dish towel too.
4. Place the potatoes back in the bowl. Finely grate the onion into the bowl of potatoes. Mix in eggs, flour, and season with as much seasoning as you like. (I like to fry one latke to test to make sure it’s seasoned to my liking!)
5. Heat oil to 375(an electric fry pan works well).
6. Carefully spoon some batter into your hands to form a patty, making sure to form a patty with no shreds sticking out (this is the part that’s adapted for little eaters). Do not overcrowd or the temperature of the oil will drop and the latkes will be greasy. Cook until lightly golden brown, carefully flip. When done, drain on paper towels.
Serve with applesauce or sour cream!
Makes around 12 pancakes depending on size.
